Let's just get this out of the way- I'm not crazy. But I have made my own crackers. 

When you feed your started you only need a little bit, think tablespoon, to keep your starting going. This process usually leaves you with a lot of starter left over, even if you are making bread. The amount of starter you need for bread depends on your recipe. My go-to bread only needs about a heaping table spoon or so. Other recipes I've used have called for much more. But I digress, back to left over starter. 

I've written before about making savory pancakes with the left over starter. Since making these crackers, pancakes might be a rarer occurrence. 

Ingredients 
2/3 cup starter (could be fed or unfed- I used fed)
3 tablespoons coconut oil (or butter or olive oil- whatever ya got)
3/4 cup whole wheat flour (same as above, use what you have)
1/4 teaspoon salt
1/4 teaspoon baking soda
extra coarse salt for topping (optional, I forgot to top with salt and it was fine)

What to do...
- Mix starter and oil/butter together
- In a separate bowl mix dry ingredients
- Mix dry into the wet, hand mix until there is no flour showing
- Cover with a plate/plastic wrap and refrigerate for 8 hours (overnight, all day at work, 6 hours, whatever)

This next part is best to do in batches...but ya know, do whatever. 
- Take dough out of the fridge and cut in half
- On a lightly floured surface roll out dough as thin as you can (you could also do this directly on the cookie sheet and in that case use a little oil instead of flour on the pan)
- Cut the rolled dough into squares/rectangles/hexagons/whatever; place them on a non-greased pan
- Bake at 350˚ for 8 minutes, turn the tray and bake for another 8 minutes. 
- Cool and keep in an air tight container


These crackers taste similar to wheat thins. I didn't roll my crackers out that thinly, which was okay! Made them a little heftier to dip into hummus. Mmm.  I like that I can prep these crackers and then work on them later. Usually when I am feeding my starter I'm about to go to work, bed or not be around my kitchen. The pancakes are meant to be made RIGHT THEN, which is great in some case but not lately the most convenient option for me. The crackers are a make-wait-bake situation.
