I do love celebrating other people's birthday. Really, any excuse for cake! This sprinkle-y cake was make for a work friend whose birthday was just after Thanksgiving. Knowing she loves chocolate and I've been somewhat obsessed with Bon Appetit so after a quick search on the BA site, I landed on the recipe for Easiest Chocolate Birthday Cake.

This cake and the recipe layout is simple to follow and make. I wanted to double the recipe for a two tier cake, which was easy enough to do. The only thing was to add less batter to the cake pans and not be desirous to use up the batter. Hill-like cakes are hard to stack or look nice, even frosted. My suggestion - use the extra batter in a cupcake or a little cake tin. 

The frosting is great. My love of cream cheese, mascarpone or whipped cream frostings runs deep. The more flavor and depth outside of the sugary sweetness is my preference for any baked good covering. This frosting didn't quite set up as firm, despite the recipe's forewarning about over beating and becoming too stiff. This might be because I doubled the recipe. To combat this I frosted a thin coat, or crumb coat and refrigerated the cake to let it set before doing the rest. The frosting is easy to apply and swirl in to a pretty (and simple!) pattern. Sprinkles optional.

A weird, yet not so weird kitchen hack I just started doing this week - putting olive oil in a squeezy bottle. Crazy simple, but makes my life so much simpler. I'm not reaching for a big, glass bottle of oil from the top cabinet, or worry about over pouring for my morning eggs. I reused a mambo sauce bottle but you could always purchase one especially.
