If you're anything like me then your freezer has about 4-6 black bananas in it. You toss them in when you can be bothered to eat as many bananas as you bought or they've turned just past your acceptable banana ripeness level.  Some people might be freezing them for smoothies, bully for those people, but most of us are saving them for that day when you decide to make banana bread. 

Stone fruit season is coming to an end, err well has sorta ended by now, but if you happen upon any ripe peaches, plums or apricots I suggest you make this banana bread. I recieved white peaches in my CSA bag a few weeks ago and wanted to turn them into something other than just scarfing them down. Which I did do and it was great. This banana bread is not as sugary sweet or dense as the bread my usual recipe turns out.

Ingredients
1 3/4 cups all-purpose flour (I did half whole wheat flour)
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup mashed banana
1 cup finely diced peaches (about 2 peaches), plus about 6-8 thin peach slices for topping
1/2 cup packed dark brown sugar, push some to sprinkle on the top
2 tablespoons butter, browned or melted (you can also use coconut, olive, or canola oil)
1 egg
1 teaspoon vanilla
1/3 cup nonfat plain vanilla greek yogurt

Directions 

  • Preheat oven to 350 degrees F. Grease a loaf pan.

  • In a medium mixing bowl, combine flour, baking soda, cinnamon and salt together and set aside.

  • In a large mixing bowl, whisk together mashed bananas, butter, 1/2 cup brown sugar until well combined. Add vanilla and egg and whisk again until well combined. Whisk in diced peaches. Add in dry ingredients and yogurt alternatively, folding together well combined.

  • Pour batter into loaf pan. Top with thinly sliced peaches and a hefty sprinkle of brown sugar over the top. Dust lightly with cinnamon.

  • Bake for 60-70 minutes, or toothpick comes out almost clean in center.

  • Cool for 10 minutes in pan, then remove from pan gently and transfer to wire rack. Cool completely.

Speaking of banana bread, did you see the shenanigans that Chrissy Teigen got up to on Twitter when she needed brown bananas for banana bread?? (Read about the situation, it was bananas) Well, that's why you need to keep bananas in your freezer. You never know when you'll be working on your second cookbook and need bananas! Such a common thing, you'd think she'd know.
