Your Go-To Drink, But Cake

There's something about knowing your own tastes in life. Having solid knowledge of your food and drink preferences that is reassuring. No heeming and hawing over a menu, but having a go-to drink at a bar. You order it knowing you'll like it and not be let down. 

or a coworker's birthday, I being tasked with the cake tried to figure out what to make. I bake better when I'm inspired. Max's go-to drink is a Jack and Coke. For his birthday I couldn't think of anything better than a Jack and Coke cake.

Have you ever had a coke cake? Maybe it's a southern thing but soda pop cakes are a thing in souther grocery stores. Cheerwine, Orange Crush, Dr Pepper, Root Beer, Cream Soda- you get the idea. The buttercream is pretty standard but with the added twist of whiskey.  This recipe made a lot of frosting, a little too much for a bundt cake. However it did allow me to create delicious whiskey frosting waves on top if the cake.

Jack and Coke Cake

Cake
- 1 box chocolate cake + wet ingredients on the back
- chocolate pudding + 1 egg
- 1 can Coke, which you'll use instead of water

Buttercream
- 3 cups powdered sugar
- 3/4 stick unsalted butter, room temperature
- 4 tablespoons Jack Daniels whiskey
- 1 teaspoon vanilla extract

Directions (Have I mentioned this cake is super easy to make??)
- Make cake according to the directions on the box, instead of a water add use Coke. 
- Add pudding powder and add an extra egg
- Bake! I used a bundt because it's easy. But you use whatever pan style you'd like. 

- In a bowl or stand mixer whisk the butter for a couple minutes. You want it to be light and fluffy.
- Slowly add the powdered sugar, a few plops at a time. Adding it slowing prevents the frosting from being grainy.
- After you've added half of the powdered sugar, add in a bit of whiskey and then mix again. This will thin it out a bit, allowing you to continue mixing in the remaining sugar. Continue to add a bit of whiskey and mix until you’ve used all the sugar. 
- Add vanilla to make it a little less whiskey-y. If you want. 
- Swirl frosting over a cooled cake.
