Banana Brunching 🍌
More banana bread coming your way! Saturday I had some ladies from my community group over for a holiday breakfast. I love breakfast and brunch and anything I can eat with hot coffee and juice.
A while back when I posted my Peach Banana bread, I mentioned that week celeb Chrissy Teigen asked Twitter to help finding brown bananas for banana bread recipe she was working on for her second cookbook. (Side note if none of this is ringing any bells- check out this explainer) Later she posted the recipe for the now infamous banana bread. Which I thought would be a perfect brunch bread.
All the banana drama aside, I took 5 frozen bananas out of the freezer, like any normal human, defrosted them and made the bread! This recipe does call for a lot of extras- unsweetened coconut, vanilla pudding and chocolate chips. It can seem like a bit much for banana bread, that is inherently simple. But somehow, it works... The additions give this heavy, sweet bread some dimension breaks up the usually sweetness of banana bread.
