Zealous for Zucchini
There's pastry crust in this one so it fits more into the theme of BreadLust. Ahhhh tarts. Savory zucchini tarts or well, a galette is more accurate. A galette is a peasant pie. It has all the same trappings as a normal pie but doesn't take as much filling or crust.
Ingredients
- savory pastry crust
- zucchini sliced (1 smallish)
- goat cheese (1/3 cup)
- garlic (small clove, minced)
- 1 egg (beaten)
- basil (handful, cut into small pieces)
- salt, pepper
How To
- Roll out dough into roundish circle. Transfer to lined baking sheet.
- Use pastry brush to lightly coat the inside of the pastry to prevent leaks.
- Mix goat cheese, salt, pepper, egg (leave just the tiniest bit for washing the outside of the pastry before baking. Trust me, you don't need a lot but some.) and basil.
- Put cheese mix in the center of the dough, leaving about 2 in/1 1/2 in to fold up.
- Place the zucchini slices on top of the cheese mixture, then fold up the sides, overlapping carefully. If you dough breaks at the seams pinch it together.
- Use the last of the egg and coat the outside of the pastry.
- Bake at 415˚ for 30 minutes or until golden brown.
