Hi.

Welcome to BreadLust!
I hope this my baking adventures inspire you to on your own!

Zealous for Zucchini

Zealous for Zucchini

There's pastry crust in this one so it fits more into the theme of BreadLust. Ahhhh tarts. Savory zucchini tarts or well, a galette is more accurate. A galette is a peasant pie. It has all the same trappings as a normal pie but doesn't take as much filling or crust.

Ingredients

2017-07-30 14.31.47.jpg
  • savory pastry crust
  • zucchini sliced (1 smallish)
  • goat cheese (1/3 cup)
  • garlic (small clove, minced)
  • 1 egg (beaten)
  • basil (handful, cut into small pieces)
  • salt, pepper

How To

  • Roll out dough into roundish circle. Transfer to lined baking sheet.
  • Use pastry brush to lightly coat the inside of the pastry to prevent leaks.
  • Mix goat cheese, salt, pepper, egg (leave just the tiniest bit for washing the outside of the pastry before baking. Trust me, you don't need a lot but some.) and basil.
  • Put cheese mix in the center of the dough, leaving about 2 in/1 1/2 in to fold up.
  • Place the zucchini slices on top of the cheese mixture, then fold up the sides, overlapping carefully. If you dough breaks at the seams pinch it together.
  • Use the last of the egg and coat the outside of the pastry.
  • Bake at 415˚ for 30 minutes or until golden brown.
