Bread Salad (No Really)
Nope. Not kidding. Technically this side dish is called panzanella. Classically an Italian bread and tomato salad, of sorts. I loosely followed this recipe, but really I used what I have in the fridge. For me it was tomatoes, basil, corn and onion.
In addition to using up whatever vegetables you've got on hand, it's also a way to use up all that homemade bread you have lying around. Just me? Oh, okay.
My slapdash method of making panzanella is as follows:
Tomatoes: chop, salt, place in colander to drain delicious tomato juices used later for a dressing.
Bread: slice and dice into bite sized chunks, toss in olive oil, place on a baking sheet and toast for 5-10 minutes
Other veg/herbs: chop, season, what-have-you, hand tear or chop basil, sautée onions, unless you have a death wish
Combine: in a large bowl mix bread, veg and herbs
Dressing: Whisk together tomato juices, white wine/cider vinegar (I used orange champagne because it's all I have..THEME OF MY LIFE Y'ALL) and a dash of salt and pepper together, pour over bread/veg mix, toss to combine
IMPRESS EVERYONE WITH YOUR CULINARY PROWESS. Or you know, the ability to combine and mix things together.
